Fixed it! Ubuntu server when you shut it down, doesnt really shut down.. it gives you a small UI screen. I was clicking "resume" which I assumed was appearing AFTER it rebooted as I was not watching... A sudo shutdown -r now fixed it all... Thanks for all the help!
